Jaffa cakes



If you are a fan of jaffa cakes, you have to make these. They are spot on and yes, definitely better - but what isn't better home made? I have added a slight twist to the standard jaffa cake and came up with lemon jaffa cakes! But don't worry, if lemon doesn't appeal, I have also included the usual orange version!

Ingredients
Marmalade (if you want orange flavour)
Lemon curd (if you want lemon flavour)
200g dark chocolate
50g white caster sugar
1 large egg
60g self raising flour

Heat the oven to 200C. The first thing we need to do is make the base of the jaffa cakes. This is different to making a normal cake as it is a slightly different texture we are after. To acheive this texture, we leave out the butter. Put the egg and sugar in a bowl and with an electric whisk, mix until it thickens. It will take about 5 minutes. Next, stir in your flour and then you have your batter.

Grease your 12-hole tin and evenly distribute the mixture using a teaspoon.


Place in the oven for 10 minutes until golden brown and solid to the touch.


Move to a cooling rack to cool and then slice in half to produce the base of the jaffa cakes.


If you are making lemon jaffa cakes, spoon a teaspoon of lemon curd straight onto the jaffa bases. However, for the marmalade, you want to heat this in a saucepan gently so it becomes runny. Immediately pass it through a sieve to remove the zest and leave to cool and set in a bowl. This will only take 5ish minutes. Once cooled, you can spoon this onto the jaffa bases too.



Now you need to melt your chocolate. I do this by boiling water in a saucepan and placing the chocolate in a bowl which rests over the saucepan. Once melted, allow to cool slightly and then spoon over the jaffa bases so the top is covered. Leave so the chocolate sets which may take a few hours.
  

Enjoy with a cup of tea, I went for jasmine green tea, my all time favourite.






I love making food that you can straight up buy the identical thing in the supermarket because you can then compare and realise how much better yours are! Most people wouldn't dream of making their own jaffa cakes, but it is so worth the effort!
