Healthy Easter Nests!



 These little Easter nests are a healthy alternative to the usual chocolate coated rice crispies/cornflakes nests that most people are familiar with. They even contain two superfoods: cacao powder and chia seeds! Granted they require a few more ingredients, but if you're into healthy eating then you will probably have the majority of these already in your cupboards! There is no shop bought chocolate in the nest recipe (just cacao powder) and you would not be able to tell. They truly are delicious and you do not have to feel any guilt in munching down on these. The mini eggs are the only naughty part, however if you really do not want to have them there are lots of healthy alternatives which I mention later. And how could I not mention how cute these look too!

Ingredients
3 tbsp almond butter
2 tbsp flaxseed
2 tbsp cacao powder
4 tbsp coconut oil
2 tbsp honey
2 tbsp chia seeds
5 tbsp hot water
Shredded wheat (2 of the big ones or 45g of the small ones)
30g oats
cupcake cases

To decorate:
Mini eggs
Other ideas: raspberries, blueberries, yoghurt coated raisins or peanuts.

Makes 10

Break your shredded wheat up and combine with the oats in a bowl. Add in your chia seeds too and then set aside. If you have a food processor, use it for this part. If not, it doesn't matter, you can mix it yourself! Melt your coconut oil and then place into your food processor/bowl along with all of the remaining ingredients and blend until well combined. Add this mixture into the shredded wheat and oats and with a wooden spoon, you want to mix it all in. 

Place your cupcake cases into a cupcake tray and spoon your mixture into the cases. The mixture needs to be compact to make sure it sets properly and formed into a next shape. Do this using the back of a spoon. Once all nests have been shaped, place in your fridge for at least an hour (ideally longer) until set.



Remove the nests from the cases and decorate with whatever you fancy! I went for mini eggs and I bought these little chicks, but if you want to avoid adding anything bad to these healthy nests at all then a few guilt-free suggestions are berries (especially raspberries), nuts (I think a couple of almonds and/or cashews in each nest would taste great), yoghurt coated fruit, raisins, and cranberries. 






I just can't get over how cute the little chicks are!!
