Breaded mushrooms with garlic mayo



These breaded mushrooms make the perfect starter. We all know mushrooms are not very filling and are light, which is exactly what you want in a starter. I could easily eat a big plate of these to myself, and the garlic mayo is a great added kick of flavour. An alternative way to cook these is to deep fat fry them, but I will be cooking mine in the oven to make them a tad healthier.

The garlic mayo I made here is the cheats way without a doubt, but it tastes great and the focus here is the mushrooms anyway!

Ingredients
1 punnet of mushrooms (button, chestnut or closed cup)
Plain flour
2 eggs
Breadcrumbs
Olive oil
3 cloves of garlic
Mayonnaise

Give your mushrooms a good wash, removing any dirt. If you are using button mushrooms, there is no need to cut them. If you are using chestnut or closed cup mushrooms, then you will need to quarter them. Into 3 bowls, place some plain flour in one, your breadcrumbs in another (I bought my breadcrumbs already made, but definitely make your own if you have time!), and whisk two eggs in the third.


Preheat your oven to 190C. Take a mushroom, start by coating it in flour, and then cover it in egg. Lastly, you want to roll it around in the breadcrumbs so it is fully covered. Do this to all your mushrooms, putting them onto a baking tray with a little oil.


Put in the oven for 30 minutes until crispy and golden. Whilst they are in the oven, you can prepare your garlic mayo. Simply crush 3 cloves of garlic and whisk into about 3-4 tablespoons of mayo. This will be really quite garlicky, so maybe only use 2 cloves if you don't want it too overpowering- but it is garlic mayo afterall! If you try it and it is too much for you, simply add in some more mayo, or alternatively if it is not garlicky enough for you, add in another clove.

Serve with some slices of lemon and some sort of leaves - I went for rocket.




There are loads of different sauces you could serve up with these, such as plain mayo, ranch, sour cream and chive, onion and garlic, or some sort of chilli dip. You can buy these ready made in super markets, or why not have a go at making your own!
