Crispy duck salad



This salad is so full of flavour that you won't realise you are eating a salad. I know that sounds silly, but if you are not a huge salad eater and find it a struggle to get through a salad, then I promise you won't with this one. There are so many different flavours and textures in this, you won't get bored after a couple of mouthfuls. It is also super easy to make despite the amount of ingredients, but the duck does take a long time to cook so make sure you start well before your belly starts rumbling! The best way I would describe this dish is a salad version of crispy duck pancakes!

Ingredients
Salad
2 duck legs
1 orange
2 red chicory heads
1/2 chinese cabbage
1/2 cucumber
4 spring onions
Handful of beansprous
Handful of mangetout
Handful of fresh coriander
1 red chilli
olive oil
salt and pepper

Dressing:
2 tbsp soy sauce
1 tbsp toasted sesame oil
1 tbsp olive oil
1 tbsp honey
1 lime
2 tbsp sesame seeds

Serves 2 as a main or 4 as a starter

Now I realise this is quite a long list, but you will have a fair bit of each ingredient left over which you can make other dishes with. Also, they are not expensive ingredients and you will probably find you have most of the dressing ingredients already in your cupboard!

To get started, turn your oven on to 180C. Place the duck legs in a roasting tray, drizzle with olive oil and season with salt and pepper. Place in the oven for 1.5 hours. After 1 hour you want to turn the oven up to 200C. If after 1.5 hours the skin isn't really crispy, then turn your oven up again to 220C for a further 5-10 minutes.



Whilst the duck is cooking, you can prepare the salad and dressing. Thinly slice all of the ingredients.





Add all the salad dressing ingredients into a jug and mix thoroughly.

Once the duck is done, you need to shred the meat using two forks. Simply tear the meat off the bone, it should come off really easily.



Serve simply by mixing the salad dressing into the salad, and then top with the crispy shredded duck. Sprinkle some sesame seeds over the top to finish it all off!







Not only does this salad taste incredible but it looks seriously impressive too. It's a great choice if you are hosting a dinner party as you can serve a big platter of it in the middle of the table and everybody taste a portion. It contains a lot of vegetables all of which are raw so no nutritional content has been lost through cooking!
