Giant half baked cookie



This recipe is absolutely heavenly. I was actually aiming to recreate the cookie dough dessert that Pizza Hut do. If you haven't had it before, it is a big cookie that is half baked and is all gooey inside. I haven't had one in years and years as I never go there anymore, but I had a weird craving for one the other day so I got in the kitchen and attempted making it. I must say, I was so pleased with the result, it turned out much better than expected so I had to share it with you guys. It will leave your sweet tooth satisfied for sure.

Ingredients
1 egg
100g SR flour
100g unsalted butter
85g golden caster sugar
100g chocolate chips or chopped up chocolate [white, milk or dark]
1tsp vanilla essence
1/2 tsp bicarbonate of soda

To serve:
2 scoops vanilla ice cream
30g chocolate (any of your choice)

Whisk your egg in a mixing bowl.
Melt your butter in a saucepan on a gentle heat and add to your whisked egg. Add in your sugar and vanilla essence and mix these ingredients together.
Sift in the flour,bicarbonate of soda and chocolate. Gently fold these dry ingredients in until all combined.

It is now ready to cook. Grease your baking tray and pour the mixture in. Cook for 16 minutes, although keep a close eye on it. The baking tray I used was 21cm in diameter. It is fine to use two smaller trays though, or a bigger one (your cookie will just be thinner) but just be aware that the cooking time may be reduced if so, so check after 8-10 minutes.



Whist the cookie is cooking, you want to melt your chocolate. I have gone for dark chocolate to give it a richer taste. I added half a teaspoon of coconut oil in to my chocolate when it was melted to make it a bit thinner so it is pouring consistency. It will be absolutely fine not to add any oil though.

You want the top to be golden brown, but remember it is a half baked cookie, so the inside should be all gooey and not entirely cooked. It will not be firm as it is not fully cooked like a cookie, it will be a tad wobbly.



Leave the cookie in the baking tray and serve in this. Pour your melted chocolate all over the top, and finish with two scoops of vanilla ice cream.







It is supposed to be eaten straight out of the oven, so you don't want to save half to eat later. If you are making this just for one, then you can freeze half the uncooked mixture for another day!
