Chocolate orange cupcakes


These cupcakes are absolutely out of this world. They are bursting with a delicious zesty flavour with the perfect balance of rich dark chocolate in there too. They contain a surprising amount of flavour hidden in there. These are up there with the best cupcakes I have ever made. 

Ingredients
115g/4oz butter or margarine
115g/4oz self raising flour
115g/4oz caster sugar
2 eggs
1/2 large orange (you need the other half for the frosting)
25g dark chocolate

Frosting
115g/4oz dark chocolate
25g/1oz butter
1 tbsp golden syrup
1/2 large orange

Cake recipes are so easy to scale up or down. The rule is, however many eggs you use, double that amount and that is the ounces of flour, sugar and butter you should use. I have added in ounces in the ingredients above to show this - 2 eggs, 4 oz flour, sugar and butter. Simple right!
Don't forget to scale the orange and chocolate too.

And of course, you will also need some pretty cupcake cases....

Preheat the oven to 180◦C.  Finely grate half of the rind of your orange into a bowl and squeeze in the juice too. Add in the butter and sugar. With an electric whisk or by hand, beat until light and fluffy.


Add and beat in the eggs. Finally, sift in the flour and grate in the dark chocolate.


Using a wooden spoon or a spatula, gently fold in the chocolate and flour until combined. Spoon the mixture into your cupcake cases and place in the oven for 20 minutes, but keep a close eye on them after about 16 minutes.


Do not open the oven door until you think they are cooked. They should be golden and firm to the touch. Transfer to a wire rack once cooked and allow to cool before adding the frosting.



Once the cakes are cooked and are cooling, you can start preparing the frosting. Place the chocolate in a heatproof bowl, along with the butter and golden syrup. Place the bowl over a saucepan of simmering water and stir to encourage melting. Once melted, remove from the heat. Add in the rind of the remaining half of orange, and squeeze in the juice of a quarter of the orange. Stir all this in. Allow to cool so the frosting thickens slightly. 

Using a teaspoon, put some frosting on the cake and spread it around with the back of the spoon. Allow to set, if you can wait any longer!





If you want to make something a bit different from the standard vanilla cupcake, then these are perfect. They look great, and they taste even better.
